This recipe is a favorite among diners at the Julian Grill in Julian, San Diego County’s historic gold-mining town. Celebrating its centennial this year, Julian today is best known for its apple festival and array of delicious apple-based recipes—including this sweet and savory salad dressing featuring apple cider.
Apple-Pecan Vinegarette
(makes aproximately 5 1/2 quarts)
1 lb pecans
1/4 gal canola oil
1/4 gal Apple juice or cider
3/4 lb brown sugar
3/4 cup french mustard
1/8 cup crushed italian seasoning
1/2 tsp salt and pepper
1/4 gal balsamic vinigar
blend all ingredients together
