San Pasqual Winery hosts “A Perfect Pairing” event with Chef Dave and champion BBQ pitmaster secrets

August 2, 2010 (La Mesa) – San Pasqual Winery’s new tasting room in La Mesa’s downtown village invites the public to join its inaugural cooking class and sumptuous winemaker dinner on Saturday, August 7.

 

The class, titled “A Perfect Pairing: Cooking with Chef Dave and San Pasqual Wines" is taught by San Diego's award winning BBQ Pit master Dave Vindiola from Smokealicious BBQ and CookingwithChefDave.com. BBQ topics to be covered range from wood to fire, smoke to spice, as well as selecting meats, prepping and cooking, and types of BBQ gear. Students will also work with and taste various small batch and gourmet dry rubs and BBQ sauces, as well as sampling smoked cheese, spice crusted BBQ'd pork and mouth-watering smoked chicken paired with select wines from San Pasqual Winery.

 

The class will be followed by a BBQ - focused winemaker dinner with a tasty selection of small dishes prepared by Chef Dave himself - each paired with a select San Pasqual wine introduced by the new winery co-owner and winemaker, Linda McWilliams. San Pasqual Winery’s tasting room and gallery is located at 8364 La Mesa Blvd. in the heart of La Mesa’s downtown village.

 

The BBQ class will be held from 4-6 p.m. and cost $50 (SPW Club Members $35).
Winemaker dinner is from 6-8 p.m. and costs $65 ((SPW Club Members $60)
Class and Dinner Combined: $95 ($85 SPW Club Members).

Chef Dave was classically trained in the Culinary Arts at the Institute of Culinary Education in New York City. Following his formal training he apprenticed at a bistro in Greenwich Village under New York Chef Sebastian Maczko. Upon returning to San Diego he continued to work in the culinary arts as a private caterer, personal chef and culinary instructor. He is a highly popular teacher at Great News Cooking School in Pacific Beach, the head pitmaster of the award-winning competition BBQ Team Smokealicious and the chef at an Organic Farm in Orange County.
